Mix-vegetables Oats Upma

What you will need:

Oats 1 ½ cup

Mustard seeds 1 tbsp

Onion, finely chopped 1 large

Chana dal (Bengal gram) 1 tbsp

Tomato, finely chopped 1 large

Urad dal (Black gram dal) 1 tbsp

Mixed vegetables (Peas, beans, carrots, capsicum, cabbage etc.) 1/4 cup

Curry leaves 8-10

Red chilli powder 1/4 tbsp

Ginger, shredded 1/2 inch piece

Hing (Asafoetida) powder 2 pinches

Garlic, chopped 2 cloves

Water 2 cups

Green Chillies, slit lengthwise 2

Oil 1 tbsp

Coriander leaves, chopped 1 tbsp

Salt To taste

Lemon (optional) 1

Method of Preparation

  • In a pan, boil mix-vegetables (peas, beans, carrots, capsicum, cauliflower, cabbage) with enough water and little salt.
  • Dry roast oats in a separate pan till their whiteness disappears and they look brownish. Take them out of the pan.
  • Heat oil in the same pan and splutter mustard seeds, chana dal, urad dal, curry leaves, green chillies and hing.
  • Add ginger, garlic and chopped onion. Sauté well.
  • Add chopped tomato & cook for 3-4 minutes.
  • Strain the boiled vegetables and add. Sauté briefly.
  • Add water to the vegetables and bring to a boil.
  • Now add oats, chilli powder and salt. Mix thoroughly.
  • Cook until the mixture is of tender/soft consistency. Add more water if required.
  • Squeeze lemon juice on the top and garnish with chopped coriander leaves.
  • Serve hot.
